Sey Coffee

 

 

 

 

The shop is located along Grattan Street in Morgantown, Brooklyn's Bushwick neighborhood, Sey Coffee is both a cafe and a roaster. Tobin Polk, Lance Schnorenberg and their co-founders of 33 years, began roasting coffee in an apartment on the fourth floor just around the corner in 2011. The name was Lofted Coffee. Local clients included Greenpoint's Budin and Soho cart services Peddler and Peddler.

 

 

 

 

Sey's emphasis on buying micro-lots--or even whole harvests from single farmers--has earned it the praise of discerning New York City coffee aficionados. In the past they made a six-bag micro-lot purchase of Danilo Dones Sitio Catucai 785 from Brazil's Espirito Santo region. The beans were picked at peak ripeness and floated to remove defects, then dry fermented for about 36 hours before being dried on the farm. The result is a coffee with hints of berry, melon and lemongrass.

 

 

 

 

Sey's goal of holistically improving the well-being of growers, staff and customers extends beyond the retail store. It makes use of biodegradable disposables and composts, keeping waste out of the landfill and converting it into substances that reduce harmful greenhouse gases and enrich the soil. It also reduces gratuity. This lets baristas focus on their craft and earn a living.

In a recent Q&A with Atlanta Coffee Shops, General Manager Ian Walla reveals that La Cabra serves approximately 250 different coffees a year, and usually has seven or eight varieties on offer at any given point.

They roast and make their own blends and single-origins (there were six at the time I was there), but they also have cuppings on Sundays that are open to the public. Imagine it as a tasting room for breweries. You can smell and taste the beans, ranging from chocolaty earthy (one was very tomato-like!). They're away from the main roads and it's worth the trip.
